Traditionally the meat used in Shawarma is grilled in a vertical barbecue- usually the whole day long. This could be chicken meat, lamb meat or a mix of it. The scrapes of meat of this roasted block are what constitute the major content of Shawarma. They can be served directly on a plate or wrapped up in a wheat one. It is not the pita bread but the local bread which can be either prepared at home or bought from the market. This is the version that is available in the authentic eateries. The taste may differ from place to place. In fact, an upmarket restaurant is bound to serve a much more fanciful version but the taste of this delicacy is best, when you lick it from a small eatery off the street.

Once you have Shawarma, chances are that you will get hooked onto it and would want to have it all the time. It may not be possible to fly down to Dubai every time you have the craving for Shawarma. Hence, it is more practical to get a home recipe of Shawarma you get in Dubai. All you need is some of the spices that add the distinct flavor to the delicacy. The basic spice with which the meat is marinated includes grounded coriander, cumin, cloves, paprika, black pepper, cinnamon, garlic, onion, vinegar and olive oil. Marinate your meat- checker or lamb with these spices for at least one hour. The meat needs to be cooked on a pre-heated iron skillet. Put it on the skillet and let it fry in a little oil till the time meat gets some color. You can prepare a salad using cucumber, lettuce, onion, tomatoes and red pepper bells.

A yogurt dip also goes extremely well with Shawarma. Add a tablespoon of Tahina to the low fat yogurt and you have the dip. Wrap your Shawarma in Pita bread or local Arabic bread if it is available. You can reduce the spiciness of the recipe by adding salad and yogurt.
